- 1 pint black beans (cooked from 120g dry), rinsed and drained
- 1 pint black eyed peas (cooked from 120g dry)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 2 green onions, chopped
- 1 cup corn
- 1 cup cherry tomatoes, quartered
- 1 1/2 Tbsp lime juice
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- salt to taste
Combine all ingredients and mix well. Refrigerate overnight before serving.
